  • 2 c. chopped or coarsely grated, unpeeled apples
  • 1 c. sugar
  • 1 egg, beaten
  • 1/2 c. cooking oil
  • 1 1/2 c. unsifted all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. ground nutmeg

    Blend sugar and apples; let stand 30 minutes.

    Add beaten egg, oil and vanilla to apple-sugar mixture.

    Add all dry ingredients and stir until well mixed.

    Bake in preheated 350° oven in greased 8 x 8 x 2-inch or 7 x 11 x 2-inch pan for 35 to 40 minutes.
