  • 1 1/4 c. oil
  • 2 c. sugar
  • 2 eggs
  • 2 1/2 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 2 tsp. vanilla
  • 1 c. chopped pecans
  • 2 to 3 c. chopped apples (Rome)
  • dash of cinnamon

Directions

    Mix oil, sugar and eggs until creamy.

    Sift dry ingredients together.

    Add small amounts of dry mixture to creamy mixture. Beat until smooth.

    Add vanilla.

    Fold in apples and pecans.

    (Do not use mixer.)

    Bake at 350° for 45 minutes to 1 hour in greased and floured pan.
