Ingredients
- 4 c. peeled, diced raw apples
- 2 c. sugar
- 1 c. raisins
- 3 c. flour
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1/2 to 1 tsp. salt
- 1 c. vegetable oil
- 1 tsp. vanilla
- 4 egg whites or 1/2 c. egg substitute
- 2 tsp. baking soda
Directions

1Mix apples, sugar and raisins.

2Let stand 1 hour.

3Stir often. Sift flour, nutmeg, cinnamon, salt and soda together.

4Add dry ingredients to apple mixture.

5Mix by hand.

6Then add vegetable oil, vanilla and egg whites.

7Mix by hand.

8Pour into greased and floured 10-inch tube pan.

9Bake at 350° for 1 hour and 15 minutes. May be served plain, with Cool Whip or frosted as desired.
