  • 1 c. vegetable oil
  • 2 c. sugar
  • 3 eggs
  • 3 c. plain flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 3 c. peeled, diced apples
  • 1 c. crushed pecans (optional)
  • 2 tsp. vanilla
  • 2 tsp. cooking sherry (optional)
  • 1 tsp. cinnamon

Directions

    Cream together oil, sugar and eggs.

    Sift flour, baking soda and salt.

    Mix all together with a slotted spoon.

    Stir in rest of ingredients.

    Bake in a 9 x 13-inch pan at 350° for 45 minutes. Punch holes all over top of cake while hot and put Topping over.
