  • 1 1/2 c. vegetable oil
  • 2 c. granulated sugar
  • 3 whole eggs
  • 2 1/2 c. sifted self-rising flour
  • 1 tsp. vanilla
  • 2 tsp. cinnamon
  • 3 good sized peeled apples (I use Red Delicious)
  • 1 c. pecans

Directions

    Mix first 3 ingredients in bowl.

    Add flour a little at a time and add remaining ingredients.

    Stir until well mixed.

    Pour into greased tube pan.

    Bake at 325° for 1 hour; cool in pan until firm, about 30 minutes.

    Turn out, leaving pan over released cake an additional 30 minutes.
