- 4 1/2 c. apples, chopped coarsely, leaving some pieces teaspoon size
- 2 c. sugar
- 2 eggs
- 1 c. cooking oil
- 2 1/2 c. flour
- 2 tsp. soda
- 1 tsp. cinnamon
- 1 c. broken pecans
Directions

1Combine chopped apples and sugar and let stand in mixing bowl. Beat egg whites stiff; add yolks and beat.

2Add oil and mix well. Let stand.

3Sift dry ingredients together.

4Add oil and egg mixture to apples and sugar and mix well.

5Add dry ingredients and nuts and stir well.

6Pour in well-greased and floured pan (Bundt pan).

7Bake at 350° until cake is done.

8Turn out of pan while cake is hot and drizzle with 1 cup powdered sugar dissolved in juice of one lemon.
