  • 1 1/2 c. cooking oil
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 c. pecans
  • 1 c. coconut (if desired)
  • 3 c. plain flour
  • 4 eggs
  • 3 c. apples, diced
  • 1 tsp. vanilla

    Mix sugar and oil.

    Add eggs one at a time and beat after each.

    Sift soda, salt and flour.

    Add to egg mixture and beat well.

    Add apples, nuts, coconut and vanilla.

    Bake in greased and floured tube pan for 1 hour and 20 minutes at 325°.

    Do not open oven while cake is baking.
