  • 1/2 c. oleo, softened
  • 2 c. sugar
  • 4 eggs
  • 2 c. self-rising flour
  • 5 c. peeled, chopped apples (4 large apples)
  • 1 tsp. vanilla
  • 1 1/2 Tbsp. sugar
  • 1/2 tsp. cinnamon

    Beat oleo at medium speed, gradually add the 2 cups sugar. Beat well.

    Add eggs, one at a time, beating well after each addition.

    Add flour to the creamed mixture.

    Stir in the apples and vanilla.

    Spoon into a 9 x 13-inch pan that has been greased and floured.

    Combine the 1 1/2 tablespoons of sugar and the cinnamon.

    Sprinkle over the cake batter.

    Bake at 350° for 45 minutes or until a toothpick comes out clean.
