- 1/4 c. butter or margarine, softened
- 1 c. packed light brown sugar
- 2 eggs
- 2 c. flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. grated lemon rind
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1 c. grated apple
- 1/2 c. buttermilk
- 3/4 c. chopped walnuts
Directions

1Cream butter; add sugar, beating well at medium speed of an electric mixer.

2Add eggs, one at a time, beating well after each addition.

3Combine next 7 ingredients; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture.

4Stir in walnuts.

5Bake in 9 x 5 x 3-inch loaf pan at 350° for 55 to 60 minutes.

6Cool in pan 10 minutes.

7Remove and cool on wire rack.

8Yields 1 loaf.
