Fresh Broccoli Casserole

Ingredients
- 1 small onion
- 2 Tbsp. butter
- 1 can Cheddar cheese soup
- 1 1/2 c. Durkee onion rings
- 1/2 c. sharp Cheddar cheese, cut up
- 2 pkg. fresh broccoli, cut
- 1 c. raw rice or more
- 1 (8 oz.) can mushrooms
Directions

1Cook broccoli in boiling water for 5 minutes.

2Remove from heat.

3Cut rice according to directions; set aside.

4Saute onions in butter, using large saucepan.

5Add the can of Cheddar cheese soup and stir.

6Cut other cheese in and add to soup mixture; mix until all is melted.

7Add mushrooms, juice and all.

8Drain broccoli.

9Add it with rice to the mixture and mix well.

10Pour into baking dish.

11Place onion rings on top or mix them in the mixture.

12Bake in 350° oven for 30 minutes or longer.
