Fresh Carrot Cake

Ingredients

  • 1 1/3 c. salad oil
  • 2 c. sugar
  • 4 eggs
  • 2 c. flour
  • 2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 Tbsp. cinnamon
  • 3 c. grated carrots (about 1 lb., a food processor does them good)
  • 1 c. nuts (optional; I put them in the processor with carrots)

Directions

    Stir oil and sugar together; beat in eggs, one at a time.

    In another bowl, sift the flour, baking soda, salt and cinnamon together.

    Add the sifted mixture to egg mixture and stir well.

    (I use my mixer.)

    Add the grated carrots and mix well.

    Bake in a greased pan at 325° for 30 to 35 minutes.

    You can use loaf pans instead of the round cake pans but it will make 2 layers.

    Also you can cut the ingredients in half if you don't want a large cake.
