- 6 fresh medium ears of corn
- 1/4 c. chopped onions
- 4 c. milk
- 2 Tbsp. butter
- 3 Tbsp. all-purpose flour
- 1 slightly beaten egg
- 1/2 c. water
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Cut corn off cob.

2In saucepan, combine corn, onion, 1/2 cup water and 1/2 teaspoon salt.

3Bring to a boil.

4Reduce heat.

5Cover and simmer about 15 minutes or until corn is barely done; stir occasionally.

6Stir in 3 1/2 cups milk, butter, salt and pepper, combining remaining milk and flour mixture to corn.

7Cook and stir until thick and bubbly.

8Slowly stir in about 1 cup of the hot mixture into beaten egg.

9Return to hot mixture in saucepan.

10Cook over low heat 2 more minutes.

11Stir.

12Do not boil.

13Serves 6.
