Fresh Fruit Berrie Bark

Ingredients

  • 8 oz good quality dark chocolate, chopped ( White chocolate or Milk Chocolate can be subsituted if you prefer )
  • 1 pints fresh whole berries, I used rasberries, blueberries and blackberries, small whole strawberries can also be used if you can find small ones, cut fruit will not work.

    Line a baking sheet or tray with parchment paper

    Melt chocolate, either carefully in microwave or in a heat proof bowl over simmering water, or a double boiler.

    Pour melted chocolate on to parchmemt paper.

    Smooth to a even 1/4 inch layer.

    Cool just 1 to 2 minutes

    While still warm place berries in chocolate, pressing very gently in a single layer.

    Chill at least 2 hours, until chocolate is hard.

    With a small sharp knife cut between berries into pieces and place on seving plate.

    Keep cold.

    This can be made the day before, but after about 24 hours the fruit begins to soften and it is best eaten before then.
