Spanish Cauliflower

  • 1 (16 oz.) bag frozen cauliflower
  • 1/4 c. butter or margarine, melted
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. saltine cracker crumbs
  • 1/2 c. chopped green pepper
  • 1 (16 oz.) can stewed tomatoes
  • 1 medium onion, chopped
  • 1 1/2 c. shredded Cheddar cheese

Directions

    Cook cauliflower in boiling water 5 to 6 minutes.

    Drain well. Combine butter, sugar, salt, pepper and cracker crumbs.

    Stir in green pepper, tomatoes, onion, 1 1/4 cups cheese and hot cauliflower.

    Pour into greased 2-quart casserole dish.

    Sprinkle with remaining cheese.

    Bake at 350° for 1 hour.
