- 4 Tbsp. plain yogurt
- 3 scallions, cut into 2-inch pieces
- 1 c. parsley leaves, chopped
- 1 pt. cherry tomatoes, cut in half and chopped
- salt and pepper to taste
- 1 zucchini, chopped
- 1 clove garlic, crushed
Directions

1In blender or food processor, place tofu and yogurt.

2Add chopped vegetables and salt and pepper to taste.
