  • 1 (16 oz.) pkg. tofu
  • 4 Tbsp. plain yogurt
  • 3 scallions, cut into 2-inch pieces
  • 1 c. parsley leaves, chopped
  • 1 pt. cherry tomatoes, cut in half and chopped
  • salt and pepper to taste
  • 1 zucchini, chopped
  • 1 clove garlic, crushed

Directions

    In blender or food processor, place tofu and yogurt.

    Add chopped vegetables and salt and pepper to taste.

    Place on serving platter with bagels, crackers or pita bread.
