Ingredients

  • 4 c. fruit (peach, apple, blueberry, any fruit)
  • 2 Tbsp. melted margarine
  • 1 Tbsp. lemon juice
  • 1 c. sugar
  • 1/4 c. margarine
  • 1/2 c. sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 1/2 c. flour
  • 2 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. milk

Directions

    Put first 4 ingredients in 12 x 8 x 2-inch baking dish or pan. Cream margarine; add egg, sugar and vanilla and beat thoroughly. Add sifted dry ingredients with milk.

    Mix gently to form a smooth batter.

    Spread on fruit.

    Sprinkle with a mixture of 2 tablespoons sugar and 1 teaspoon cinnamon.

    Bake in preheated oven at 350° for 45 to 60 minutes until crust is brown.

    Serve warm or cold with whipped cream.
