  • 2 cups fresh pineapple, diced
  • 1 large red onion, diced
  • 1 jalapeno pepper, seeded and chopped
  • 2 tablespoons red wine vinegar
  • 3 tablespoons vegetable oil
  • 12 cup chopped fresh coriander (cilantro)
