  • 2 1/2 to 3-inch piece of ginger root
  • 2 c. granulated sugar
  • 6 medium navel oranges, peeled and cut in 1/2-inch slices
  • 6 c. bite-size chunks of honeydew melon
  • 3 c. bite-size chunks of cantaloupe melon
  • 3 c. seedless red grapes
  • 3 pt. strawberries
  • 12 slices candied ginger, chopped

Directions

    Finely chop ginger root in a food processor or shred using large holes of a cheese grater.

    Pour 1 cup of boiling water into processor or put shredded ginger into a small bowl and cover with boiling water.

    Let stand 30 minutes.
