- 2 1/4 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 Tbsp. grated fresh ginger
- 12 Tbsp. room temperature butter
- 1 c. sugar plus more for rolling
- 1/4 c. molasses
- 1 egg
Directions

1Combine flour, soda and salt.

2Beat ginger, butter and 1 cup sugar until light and fluffy.

3Beat in molasses and egg.

4Beat in flour mixture until just combined.

5Chill at least 1 hour. Heat oven to 350°.

6Roll dough into 1 1/2-inch balls and then roll in sugar.

7Place 2 inches apart on ungreased baking sheets. Bake until edges start to brown, about 15 minutes.

8Centers will be slightly soft.

9Let stand on cookie sheets 1 minute and remove to racks to cool completely.

10Makes about 30 cookies.
