- 1/4 c. sugar
- 1 Tbsp. grated lemon peel
- 1/4 c. lemon juice
- 4 tsp. cornstarch
- 1/4 tsp. salt
- 1 Tbsp. butter or margarine
Directions

1In 1-quart saucepan, stir sugar, lemon peel and juice, cornstarch, salt and 1/2 cup water, until blended.

2Over medium heat, cook until mixture is very thick and boils briskly, stirring constantly.

3Remove from heat and stir in butter.

4Cool at room temperature.

5(If mixture becomes too thick, stir until of spreading consistency.)

6Fills 2 cakes.
