  • 3 cups mangoes, chopped
  • 2 tomatoes, chopped
  • 12 red onion, chopped
  • 2 cucumbers, chopped (seed if you want)
  • 1 12 cups corn, fresh best
  • 12 cup basil, fresh shredded
  • 12 cup olive oil
  • 14 cup rice vinegar
  • 2 tablespoons lime juice
  • 1 teaspoon garlic, chopped
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 1 bunch watercress, torn
  • 1 head bibb lettuce, torn

Directions

    Combine all but watercress and lettuce in a large bowl, tossing to coat all.
