- 3/4 c. sugar
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1/3 c. water
- 4 c. (about 2 lb.) sliced peaches
- 1 Tbsp. butter
- 1/2 tsp. grated lemon rind
- 1 Tbsp. lemon juice
- 1/2 tsp. almond extract
- pastry for a 2-crust pie
Directions

1Combine sugar, cornstarch and salt in saucepan; stir in water and peaches.

2Bring to boil and boil 1 minute, stirring gently. Remove from heat; stir in butter, lemon rind and juice and almond extract.

3Cool.

4Prepare unbaked pie crust; add peach mixture. Bake at 425° for 40 to 45 minutes.
