  • 3/4 c. sugar
  • 2 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/3 c. water
  • 4 c. (about 2 lb.) sliced peaches
  • 1 Tbsp. butter
  • 1/2 tsp. grated lemon rind
  • 1 Tbsp. lemon juice
  • 1/2 tsp. almond extract
  • pastry for a 2-crust pie

Directions

    Combine sugar, cornstarch and salt in saucepan; stir in water and peaches.

    Bring to boil and boil 1 minute, stirring gently. Remove from heat; stir in butter, lemon rind and juice and almond extract.

    Cool.

    Prepare unbaked pie crust; add peach mixture. Bake at 425° for 40 to 45 minutes.
