- 1 1/2 lb. ripe plums
- 1 1/2 c. sugar
- 1/3 c. cornstarch
- 1/4 tsp. salt
- 1/2 tsp. ground ginger
- 1 Tbsp. margarine
- 1 tsp. grated orange rind
- 1 Tbsp. orange juice
- pastry for 2-crust 9-inch pie
Directions

1Quarter and pit plums.

2Should have 1-quart.

3In a large saucepan, thoroughly stir together sugar, cornstarch, salt and ginger; add plums, margarine, orange rind and orange juice. Stirring constantly over medium heat, cook until sugar dissolves and mixture comes to a boil.

4Boil for 3 minutes.

5Cool slightly. Pour filling into pastry lined pie plate.

6Top with remaining pastry. Seal edges.

7Bake in 425° oven for 10 minutes.

8Reduce heat to 350° and continue baking for 40 minutes.

9Cool.
