  • 1 tbsp green pesto
  • 1 hand full of chopped chillies
  • 1 tsp smoked paprika
  • 8 fresh local scollops
  • 8 pieces of good quality pancetta

Directions

    in a bowl put the green pesto,chopped chillies and paprika in a bowl and mix to a smooth paste

    grill the pancetta so its slightly cooked.

    pan fry the Scollops with sprinkle of seasoning for 2mins
  4. 4
    wrap the pancetta around the Scollops and sercure in place finish of under the grill.

    lay the pesto on the plate to put your Scollops on the top serve with a wedge of lemon
