- 2 lb. fresh shrimp
- 2 qt. water
- juice of 1 lemon or 2 Tbsp. vinegar
- 1 Tbsp. caraway seed
- 1 Tbsp. salt
- 6 peppercorns
- 1 stalk celery
Directions

1Place water, vegetables and seasonings in saucepan.

2Heat to simmering point.

3Wash shrimp, drop in broth and allow to simmer 12 to 15 minutes.

4Permit to cool.

5Remove shrimp, shell and take out back vein of each shrimp.

6Shrimp may now be chilled for salads, cocktails, etc. or dipped in batter to be French fried.
