Fresh Spinach Salad

Ingredients

  • 1 bunch fresh spinach
  • 5 slices bacon
  • 2/3 c. oil
  • 1/4 c. garlic wine vinegar
  • 2 Tbsp. white wine
  • 2 Tbsp. soy sauce
  • 1 tsp. sugar
  • 1 tsp. dry mustard
  • 1/2 tsp. curry powder
  • 1/2 tsp. salt
  • 1/2 tsp. seasoned pepper
  • 2 hard-boiled eggs, chopped

Directions

    Wash well and thoroughly dry spinach.

    Tear leaves into bite-sized pieces and refrigerate.

    In a heavy skillet, fry the bacon until crisp.

    Drain on paper towel and crumble.

    Shake the oil, vinegar, wine, soy sauce, sugar, mustard, curry powder, salt and seasoned pepper together and pour over spinach.

    Add bacon and toss lightly.

    Top with chopped boiled eggs.
