Ingredients
- 1 bunch fresh spinach
- 5 slices bacon
- 2/3 c. oil
- 1/4 c. garlic wine vinegar
- 2 Tbsp. white wine
- 2 Tbsp. soy sauce
- 1 tsp. sugar
- 1 tsp. dry mustard
- 1/2 tsp. curry powder
- 1/2 tsp. salt
- 1/2 tsp. seasoned pepper
- 2 hard-boiled eggs, chopped
Directions

1Wash well and thoroughly dry spinach.

2Tear leaves into bite-sized pieces and refrigerate.

3In a heavy skillet, fry the bacon until crisp.

4Drain on paper towel and crumble.

5Shake the oil, vinegar, wine, soy sauce, sugar, mustard, curry powder, salt and seasoned pepper together and pour over spinach.

6Add bacon and toss lightly.

7Top with chopped boiled eggs.
