- 3/4 lb. fresh spinach
- 1/4 lb. fresh bean sprouts
- 4 green onions, thinly sliced
- 1/4 c. white wine vinegar
- 1/4 c. salad oil
- 2 Tbsp. catsup
- 8 slices bacon, fried and crumbled
- 2 hard-boiled eggs, thinly sliced
Directions

1Remove stems from fresh spinach, wash well and pat dry.

2Break into bite size pieces.

3Combine spinach, sprouts and onion. Chill, covered, for 4 hours.

4Mix vinegar, oil and catsup well. Toss with spinach.

5Arrange on salad plates, add bacon crumbs and egg slices.
