Fresh Tomato Basil Soup

Ingredients
- 4 Tbsp. oil
- 1 medium onion, chopped
- 1/2 tsp. garlic, minced
- 2 lb. tomatoes, sliced
- 1 c. lightly packed basil leaves
- 1 Tbsp. tomato paste
- 1 tsp. honey
- 1 bay leaf
- 2 tsp. cornstarch
- 3 c. chicken stock
- salt
- pepper
- julienne tomatoes
- basil leaves
Directions

1Heat oil in large frying pan.

2Saute onion and garlic about 5 minutes.

3Add tomatoes.

4Cook 3 minutes.

5Add basil, honey, bay leaf and tomato paste.

6Reduce heat and cook 10 minutes.

7Puree in blender; strain.

8To puree, add cornstarch and stock.

9Bring to a boil and then simmer for 10 minutes over low heat.

10Season with salt and pepper to taste.

11Garnish with julienne tomatoes and basil.

12Can be frozen.
