Ingredients

  • 1 (3 lb.) chicken, cut up
  • 3 onions (medium)
  • 3 large tomatoes (fresh) or 1 can tomatoes
  • salt and pepper to taste
  • ground red hot chilies to taste, (optional)
  • 1 1/2 c. water
  • 1 Tbsp. flour
  • 1/2 c. crunchy peanut butter or curry (optional)
  • 1 1/2 c. shredded coconut
  • 2 c. cheese
  • 3 tomatoes, chopped
  • 4 to 6 green onions, chopped
  • 2 c. bananas, chopped
  • 2 c. pineapple, chopped
  • 1 c. chopped green pepper

Directions

    Cut up chicken and fry in oil with salt and pepper.

    Put onion and tomatoes in blender 1 minute.

    Add to chicken and cook 5 minutes.

    Mix flour and water and add to chicken stew.

    Cook until tender.

    Serve over hot rice.

    Then add (as desired) last 7 ingredients set out for people to add to rice and stew.
