Fresh Tomato Soup

Ingredients
- 3 lb. fully ripe tomatoes, peeled, cored and chopped
- 1 large onion, chopped fine
- 2 Tbsp. chopped garlic
- 3 tsp. fresh thyme (1 tsp. dried)
- 1/2 c. parsley, chopped fine
- 2 Tbsp. chopped basil (1 tsp. dried)
- 1 can tomato paste
- 1 cube butter
- 1/4 c. flour (liquify with chicken broth)
- 4 c. chicken broth (32 oz.)
- 1 Tbsp. oregano
- 1 Tbsp. black pepper
Directions

1Saute onion and garlic in butter.

2Add tomatoes and enough broth to cover.

3Add herbs and simmer for 10 to 12 minutes.

4Put mixture through coarse blender.

5Add remaining ingredients and cook for 30 to 40 minutes.

6Add salt to taste and teaspoon of sugar if desired.

7Stir frequently.

8Serves 8.

9Okay to freeze. Lots of work, but worth it.
