- 10 ripe bananas
- 1/2 c. rice flour
- 1 c. white flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 large egg
- 1 c. coconut milk
- 1 c. vegetable oil
- 1 c. water
Directions

1Peel bananas and set aside.

2Blend remaining ingredients together and add slowly cold water, large beaten egg and coconut milk.

3Blend until well mixed.

4Heat vegetable oil until smoking and reduce heat slightly.

5Dip banana into batter and slide into hot oil carefully.

6Cook 2 to 3 bananas at a time and turnover once.

7Cook until golden brown.

8Serve warm.
