Fried Brussels Sprouts

- 1 Oil for frying
- 1 pound brussel sprouts, halved lengthwise
- 1 kosher salt
- 3 shallots, peeled and thinly sliced into rounds
- 2 fresno or red finger chiles, thinly sliced into rounds
- 2 tablespoon lime juice, fresh
- 1 tablespoon maple syrup or honey
Directions

1heat 2 inches of oil in fry pan, add 1/3 of sprouts. Cook 2-3 minutes until golden brown.

2remove to a paper towel and drain. Cook remaining batches of sprounts.

3Add shallots and peppers to oil and cook for 1-2 minutes and then add to sprount dish.

4Whisk lime juice and maple syrup in a large bowl. Add sprouts, shallots and chiles, tossing to coat in lime mixutre. Season with salt to taste
