  • 1 3/4 lb. catfish fillets
  • 2 Tbsp. mustard (prepared)
  • 2/3 c. yellow cornmeal
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. ground red pepper
  • shortening or cooking oil

Directions

    Spread catfish with a thin coating of mustard.

    Combine cornmeal, salt, pepper and red pepper in a plastic bag.

    Add fish and shake to coat.

    Heat cooking oil to 375° in a deep 12-inch skillet.

    Fry fillets, two at a time, until fish is golden brown, about 4 minutes.

    Drain on paper towels.
