- 1 3/4 lb. catfish fillets
- 2 Tbsp. mustard (prepared)
- 2/3 c. yellow cornmeal
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. ground red pepper
- shortening or cooking oil
Directions

1Spread catfish with a thin coating of mustard.

2Combine cornmeal, salt, pepper and red pepper in a plastic bag.

3Add fish and shake to coat.

4Heat cooking oil to 375° in a deep 12-inch skillet.

5Fry fillets, two at a time, until fish is golden brown, about 4 minutes.

6Drain on paper towels.
