  • 2 pounds catfish
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup cornmeal
  • 1 egg well beaten mixed with 1 tbsp. water
  • 1/4 cup fat preferably bacon grease

Directions

    Skin catfish and fillet by removing back bone and cut into portions, seasoning with salt and pepper.

    Batter the catfish by dipping into cornmeal, into beaten egg, into cornmeal again.

    Fry in hot fat about 12 minutes, until golden brown, turning once.
