- 2 lb. catfish fillets
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 lemon
- vegetable oil
- 1 c. cornmeal or cracker crumbs
- 3/4 c. condensed milk
Directions

1Cut dressed and skinned fish into slices about 1-inch thick. Have a deep fat fryer with fat deep enough to completely cover fish, hot and waiting.

2Pepper and salt the fish; dip in undiluted evaporated milk. Roll in cracker crumbs or cornmeal and drop into hot fat.

3When golden brown, drain and serve hot with lemon juice and hush puppies.
