- 1/2 c. cornmeal (I use Seafood Breader)
- 2 Tbsp. self-rising flour
- 1 tsp. salt
- 1/4 tsp. paprika
- 1 lb. catfish, cleaned and dressed
- 1/2 c. hot oil
Directions

1Combine cornmeal, flour, salt and paprika.

2Dry fish thoroughly.

3Coat both sides of fish with mixture.

4Fry fish in hot oil over low heat, about 4 minutes on each side or until golden brown.

5Drain on paper towels.

6Yields 2 servings.
