  • 1/2 c. cornmeal (I use Seafood Breader)
  • 2 Tbsp. self-rising flour
  • 1 tsp. salt
  • 1/4 tsp. paprika
  • 1 lb. catfish, cleaned and dressed
  • 1/2 c. hot oil

Directions

    Combine cornmeal, flour, salt and paprika.

    Dry fish thoroughly.

    Coat both sides of fish with mixture.

    Fry fish in hot oil over low heat, about 4 minutes on each side or until golden brown.

    Drain on paper towels.
