1For fried chicken, remove skin.

2Salt and pepper and flour chicken pieces.

3Dip in buttermilk and repeat by dipping in flour. Place in electric skillet which has 1-inch hot oil.

4Cover with lid.

5Brown on one side and turn.

6Brown other side.
-
7For last few minutes, leave lid off pan while frying to make chicken crisp. Lid on makes chicken tender and cooks through.

8To test for doneness, press fork tines next to bone in center.

9If no red rises to top, chicken is done.
