- 1 tsp. lemon juice
- 1 stick butter (frozen)
- 3 Tbsp. green onion, chopped
- 1/4 c. flour
- 1/2 tsp. salt
- pepper
- 2 eggs, beaten
- 1 tsp. milk
- 1 c. cracker crumbs
- chicken breasts, deboned, skinned and flattened
Directions

1Brush each breast with lemon juice.

2Put 3/4-inch cube butter on each piece.

3Sprinkle with onion.

4Fold and fasten with toothpicks.

5Roll in flour, salt and pepper.

6Mix egg and milk and roll pieces in it.

7Dip in cracker crumbs.

8Chill 1 hour.

9Cook in butter.

10Cook first side 10 to 12 minutes, second side 5 to 7 minutes.
