  • 3 slices cod
  • 4 large potatoes
  • parsley to taste
  • salt
  • ground black pepper
  • nutmeg
  • 1 egg
  • oil for frying

Directions

    Boil cod, remove skin and bones and flake.

    Cook sliced potatoes in plenty of boiling, salted water.

    Drain potatoes and process through a potato ricer.

    In a large bowl, add cod and knead with hands to shred well.

    Add potato puree and chopped parsley.

    Season with salt, pepper and nutmeg.

    Mix well. Add beaten egg and mix again.

    Heat oil in a skillet.

    Use 2 spoons to shape into cakes and fry on both sides until golden.

    Drain on paper towels.
