- 6 ears freshly picked sweet corn
- 2 Tbsp. butter
- 1 Tbsp. bacon grease
- sugar, salt and pepper to taste
Directions

1Over a big bowl, cut kernels off ears of the corn, then gently scrape the back of a knife against cobs to extract milky liquid. Melt butter and bacon grease over medium heat in a large cast-iron skillet.

2Stir in corn, stirring frequently.

3Simmer until tender (8 to 10 minutes).

4If corn seems to be drying out, add a bit of hot water to keep it moist.

5Taste and season with sugar, salt and pepper to suit.
