- 1/2 c. buttermilk
- salt and pepper to taste
- Mazola oil
- 1 egg
- flour (enough to make a smooth paste)
Directions

1Peel eggplant and cut in chunks, approximately 1-inch cubes in size.

2Beat egg. Add milk and enough flour to thicken.

3Add salt and pepper.

4Dip the eggplant cubes thoroughly, coating them heavily.

5Drop in hot oil and fry until golden brown. Be careful not to burn. Drain and eat while hot.
