- 1 egg, beaten
- 1 Tbsp. milk
- 1 tsp. Worcestershire sauce
- salt and pepper
- 1 to 2 c. cracker crumbs
- 2 Tbsp. grated Romano cheese
- 1 eggplant, sliced and then cut like French fries
Directions

1Beat egg and milk, Worcestershire sauce, salt and pepper.

2Put cracker crumbs and cheese in paper sack.

3Dip eggplant into egg mixture and then into cracker crumbs.

4Coat well.

5Fry in deep hot oil until golden brown.

6Drain on paper towel and serve hot. Squash, cauliflower, broccoli or any vegetable may be done the same way.
