- egg
- 1/4 c. milk
- fine cracker crumbs
- Crisco and butter for frying (half of each)

1Pare eggplant and slice.

2Beat egg with milk.

3Dip the eggplant in egg, then in fine cracker crumbs.

4Fry in Crisco and butter until nicely brown.
