- 4 medium green tomatoes (about 1 1/4 lb.)
- 1/2 c. unsifted all-purpose flour
- 1 1/2 tsp. salt
- 2 eggs
- 1 tsp. sugar
- 1 c. dry seasoned bread crumbs
- salad oil
Directions

1Trim a thin slice from top and bottom of each tomato.

2Cut tomatoes crosswise into 1/2-inch thick slices.

3On large sheet of waxed paper, combine flour with 1/2 teaspoon salt.

4In small bowl, beat eggs with sugar and remaining salt.

5Dip tomato slices, coating completely.

6Dip into egg mixture, then bread crumbs, coating completely.

7Heat 1/4 cup oil in large skillet.

8Add tomato slices; saute about 3 minutes on each side or until nicely browned. Add oil as needed.
