- 4 or 5 medium green tomatoes
- 1/3 c. flour
- 3/4 tsp. salt
- dash of pepper (optional)
- 1/4 c. shortening
Directions

1Wash tomatoes; remove stem ends.

2Cut crosswise into 1/2-inch slices.

3Combine flour, salt and pepper; dredge tomato slices with flour mixture.

4Brown quickly in shortening on one side; turn. Reduce heat and cook until slices are soft in center.

5Remove to hot platter; serve hot.

6Yields 4 to 5 servings.
