  • 4 large green tomatoes
  • 1/2 c. unbleached flour or cornmeal
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • bacon drippings or canola oil

Directions

    Cut tomatoes into 1/4-inch slices.

    Combine flour, salt and pepper.

    Dredge tomato slices with this mixture.

    Place in heavy skillet, containing hot bacon drippings.

    Fry slowly until brown, turning once.
