- 4 firm green tomatoes
- 1 egg, beaten
- 1 c. dry bread crumb (sometimes I use flour)
- 1/3 c. butter
- salt and pepper
Directions

1Cut tomatoes in 3/4-inch slices.

2Dip into egg, then into bread crumbs or flour to coat, then carefully into egg mixture and into bread crumbs again.

3Melt butter in frying pan.

4Add tomato slices and cook slowly, until brown on both sides and until tomato is tender.

5Season to taste with salt and pepper.
