  • 3 firm green tomatoes
  • 1 egg
  • 2 Tbsp. milk
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. all-purpose flour
  • 1/4 c. meal or cracker crumbs
  • 1/2 tsp. salt

Directions

    Cut tomatoes in 1/4-inch slices.

    Beat egg in bowl.

    Add milk, salt and pepper.

    Mix flour, meal or cracker crumbs and 1/2 teaspoon salt in second bowl.

    Turn tomato slices over in egg mix, then in the flour mix.

    Pan-fry in 1 cup vegetable oil at 350°. Brown on both sides.

    Drain excess fat on paper towel.
