Fried Green Tomatoes

  • 2 lb. green tomatoes, washed
  • 4 eggs
  • 1 1/4 c. cornmeal
  • 3/4 c. water
  • 1/4 c. minced chives
  • 1 Tbsp. salt
  • 1/4 tsp. fresh ground pepper
  • 1/3 c. butter or margarine

Directions

    Slice the tomatoes 1/2-inch thick.

    Do not peel or core. Drain well between paper toweling until most of the moisture of the tomatoes is absorbed.

    Beat the eggs until light.

    Mix in cornmeal, water, chives, salt and pepper.
