- 2 lb. green tomatoes, washed
- 4 eggs
- 1 1/4 c. cornmeal
- 3/4 c. water
- 1/4 c. minced chives
- 1 Tbsp. salt
- 1/4 tsp. fresh ground pepper
- 1/3 c. butter or margarine
Directions

1Slice the tomatoes 1/2-inch thick.

2Do not peel or core. Drain well between paper toweling until most of the moisture of the tomatoes is absorbed.

3Beat the eggs until light.

4Mix in cornmeal, water, chives, salt and pepper.
