- 4 large green or firm tomatoes
- 1 egg
- 2 tsp. salt-free seasoning (Mrs. Dash or other)
- 1/2 c. vegetable oil
- 2 Tbsp. margarine
- 1 c. yellow corn meal
- 1 tsp. pepper
Directions

1Slice tomatoes about 1/4-inch thick.

2Beat egg in a small mixing bowl until light and fluffy.

3Set aside.

4Combine corn meal, seasoning and pepper on a sheet of aluminum foil or waxed paper.

5Dip tomato slices in egg.

6Coat with cornmeal mixture. Heat oil and margarine in a large skillet.

7Fry slices until golden brown on both sides.

8Remove from pan.
-
9Drain on paper towels.

10Serve immediately.

11Makes 4 to 6 servings.
